Recipe for Eyemouth Tart (class 43)

  • 2oz currants
  • 2oz chopped walnuts
  • 2oz coconut
  • 1 small teacup sugar
  • 2oz cherries
  • 1 egg (beaten)
  • 2oz raisins
  • 1oz margarine (melted)

Line a sandwich tin with shortcrust pastry. Mix fruit, sugar, melted margarine and the beaten egg. Pour mixture into tin. Bake in moderate oven for 30 minutes. Cover with water icing while still hot.
